Paneer Mushroom Thai Green Curry
Ingredients
2 tbsp oil
2 tsp green chilli ginger paste
1 onion chopped
4 cloves garlic, minced
1 cup paneer cubes
1/2 capsicum cut into strips
1 cup mushroom cut into strips
Salt as required
1/2 tsp black pepper, to taste
1 cup thick coconut milk
½ tsp lemon juice
Pinch of sugar
2 tsp fresh cream
METHOD
In a pan 1 tbsp of
oil. Add in the green chilli ginger paste & fry it, Add in the chopped
onion and cook until onion is slightly translucent then add in the garlic, stir
together, Add the mushroom, capsicum and paneer. Add the salt, black pepper,
sugar, and stir everything together. Reduce heat to medium and cook down,
stirring, until veggies are tender crisp, Add in the coconut milk, stir, and
then let it simmer for about 5 minutes. Then add the lime juice over, stir, and
then remove from heat. Add in the fresh cream on top, and serve with rice,
