Bajra (pearl millet) Chilla
Ingredients:
Bajra flour - 1/4 cup
Grated carrot - 2
Cucumber grated - 1
Green chilies finely chopped - 2
Shallots (small onions) finely chopped - 3
Turmeric powder – ¼ tsp
Black pepper powder – ¼ tsp
Cumin seeds – 1/3 tsp
Fresh coriander leaves - 2-3 sprigs
Desi ghee as needed
Method.
Combine all the ingredients well no need for any extra water the
moisture from the vegetables are enough to bind it into a nice dough. Divide in
to equal portions and set aside. Heat a cast iron tawa and grease little
ghee around. Once the tawa is heated keep it on low to medium flame and take
portion of the dough and place on tawa and with wet hands spread it out
in to a round circle and as thinly as possible and flame must be at low. Then
cover and cook it on low flame for about 1 to 2 minutes then open the lid and
carefully flip it over and drizzle in little bit of desi ghee and flip
accordingly. Once done serve the hot chilla with pickle and enjoy.
