Suran Khichidi
Ingredients
200 grams Suran
(Elephant foot yam) grated
2 cups Water add
pinch of salt in the water
1 tbsp oil
½ tsp Cumin seeds
½ tsp Sesame seeds
¼ cup Peanuts
coarsely ground
½ tsp cinnamon
& clove powder
Salt to taste
½ tsp Sugar
1 tsp Lemon juice
2 tsp Desiccated
coconut
1 tbsp coriander
leaves finely chopped
Method
Peel the suran
start grating the yam. Take water and salt in a bowl. Soak the grated yam in
salted water for 15-20 minutes. After that, discard the water. Heat the oil in
a pan on medium heat. Once hot, add cumin seeds and let them sizzle. Then add
sesame seeds and saute for few seconds. Now add crushed peanuts. Saute for a
minute or two or until they are slightly roasted and get light brown color. Now
add grated suran and salt. Mix well and let it cook uncovered until it gets
soft. It may take around 5-6 minutes. Now suran is cooked, soft and tender. Now
add cinnamon, cloves powder. Add sugar and lemon juice. Mix well and turn off
the stove. Lastly add coconut and coriander leaves. Mix well and enjoy.
