Mango Kulfi
Ingredients:
Warm water - 2
tablespoons
Saffron - 1/4
teaspoon
Mangoes - 500
grams
Condensed milk -
300 grams
Fresh cream - 200
grams
Cardamom powder -
1/4 teaspoon
Almonds – 10 to 12
Almonds &
Pistachio – for garnish
Pop stick or small
matkas
Method: -
In a bowl, add 2
tablespoons warm water, 1/4 teaspoon saffron and mix it well & soak for 5
minutes. In a blender, add mangoes, condensed milk, fresh cream, saffron water,
cardamom powder, almonds and blend it into a smooth puree. Pour the mixture into
the moulds & Insert pop stick into it or small matkas (clay pots) and
garnish with almonds & pistachio. Cover the matkas with aluminum foil.
Freeze for minimum 6 hours or overnight. To unmould, allow the moulds to remain
outside the freezer for 5 minutes and then unmould the kulfi and in matkas then
take it out from freezer & Serve immediately.
