Aloo Paneer Bird Nest
Ingredients
Water - as required
Potatoes - 3 to 4
Salt - as per taste
Maida/all purpose flour - 3 to 4 tsp
Green peas - half cup
Capsicum- one small
Garlic - 2 tsp
Ginger - 2 tsp
Green chili - 2 tsp
Red chili - 1 tsp
Turmeric - 1/2 tsp
Coriander leaves- 2 tsp
Grated paneer - 100 grams
Vermicelli - 100 grams

Salt - 1/2 teaspoon
Black pepper - 1/2 tsp
Cornstarch - 1 tsp
Oil - for frying
Onions - 1 medium sized
Mint leaves - half cup
Green chili - 1 to 2
Sugar - 1 tsp
Salt - 1/2 tsp
Method
Take a pressure
cooker, add water, potatoes, little salt and cover it with lid.
Cook until 3 - 4
whistles.
Remove it from
heat. Drain and peel the potatoes.
In a mixing bowl,
add all-purpose flour, water and mix it well. Keep aside. In another mixing
bowl, add the boiled potatoes and mash them well or with the help of a food
masher. Add green peas and mash it again. Then, add capsicum, garlic, ginger,
green chili, red chili, turmeric, salt, coriander powder and mix all the
ingredients well. Now, add grated paneer and mix it well.
Take some mixture
in your hands and shape it into a nest.
Dip it in all-purpose
flour paste and add vermicelli on it. So, its look like bird’s nest.
Refrigerate for 15
minutes.
In a mixing bowl,
add grated paneer, salt, black pepper and cornstarch and mix it well.
Take some mixture
in your hand and shape it into small balls like eggs.
Heat sufficient
oil in a skillet and deep-fry these until golden brown and crispy.
Drain it on an
absorbent paper. Keep aside.
Now, deep the
prepared nest until it turns golden brown and crispy.

In a blender, add
1 onion, few mint leaves, 1 green chili, and little sugar, salt and blend it
into a smooth paste.
Take the bird nets
and spread the prepared cut nye on it. Add some coriander. Now, add the
prepared eggs on it. Serve hot.
