Lauki (Bottle gourd) Rabadi
Ingredients
Lauki (Bottle
Gourd) – 500 gms peeled and cut into pieces
Sugar – 200 gms or
as required (you can use condensed milk too)
Ghee – 5 tsp
Milk Powder – 200
gms
Cardamom seeds
crushed – 1 tsp
Milk - 2 Cup
Saffron threads
Chopped dry fruits
Method
In a cooker, add
little ghee the crushed cardamom seeds then add the Lauki and saute well for about
minute on high flame. Add one-cup milk mix well and cook until four to five
whistle. Wait for the steam to escape and open the lid. You will see the Lauki
has turned soft and mushy then add the remaining milk & cook on high heat until
the milk dries up.
Add the ghee and
mix well until it starts leaving the sides of the lauki mixture. Then add the
sugar and cook until all the sugar has melted. Add chopped dry fruits and
saffron & mix well. Finally add the milk powder and give it a good stir
till all the lumps have disappeared and the lauki rabadi has attained your
desired consistency switch off the flame and let it cool completely. Now pour
the rabadi mixture into the serving dish, decorate it with some chopped
pistachios, and enjoy.
