Digestive Biscuit and Dates cake
Ingredients:
1 packet digestive biscuit
2/3rd cup thickened cream
100 grams fresh dates grinded to fine paste
½ cup sugar
1 tbsp butter
½ cup cocoa powder
1 tsp vanilla essence
5 almonds & walnuts chopped (Optional)
For chocolate sauce:
150 grams dark chocolate
½ cup thickened cream
white chocolate or m&m for decoration
Method:
First, break the digestive biscuits into small pieces. Then in
double boiling method, melt 2/3rd cup thickened cream, ½-cup sugar, 1 tbsp
butter and whisk until butter melts completely. Additionally add cocoa powder,
whisk smooth, and then add the date paste. Keep whisking until the mixture
turns smooth and silky. Pour the prepared chocolate mixture over biscuit
pieces. Add vanilla essence along with almonds and walnuts. Then mix well
combining everything. Transfer the mixture into cake pan & level up and
press tight with the help of a spoon making sure the base is tight. Keep in
refrigerator for 30 minutes, allowing to set. Meanwhile prepare the chocolate
sauce by melting 150 grams dark chocolate in double boiler method. Add
thickened cream and whisk smooth. Keep whisking till the mixture turns smooth
and silky. Then pour the prepared chocolate sauce into prepared biscuit cake
and level out by tapping slightly. Refrigerate for minimum one hours or more
until the chocolate sauce sets completely. Finally decorate the biscuit cake
before serving.
