Shrikhand
Ingredients:
3 cups thick
yogurt
Half cup powdered
sugar
Few strands of
saffron
¼ tsp cardamom
powder
1 tsp almonds
chopped (optional)
1 tsp pistachios
chopped (optional)
Method
Take
a large mixing bowl and place a sieve on it then place a muslin cloth into the
bowl. Pour thick curd in it and tie the cloth tightly.
Leave
it around minimum of 4 to 6 hours and you will see the water has separated from
the curd. Thick and creamy curd is ready which also known as hung curd.
Further,
add in powdered sugar, saffron strands and mix well making sure the sugar is
dissolved in curd. Then add cardamom powder and again give a quick mix.
Garnish
with few chopped almonds and pistachios. Store in refrigerator or serve
immediately.
