Eggless Bread Pudding
Ingredients
6 white
bread slices large
1
1/2 cups milk
7
tbsps Sugar
3
tsp Custard
Powder
1/2
tsp Vanilla
extract
2
tbsps Milk
powder
Method

Roughly, chop the
bread slices, grind it in to powder, and keep aside.
In pan, add milk
and heat it until warm (no need to boil).
Add 5 tbsps sugar and custard
powder and keep stirring until sugar dissolves and mixture starts getting thick.
Now add the bread powder
in the milk along with vanilla extractand milk powder, mix well and keep aside.
In a baking pan
(any shape) add little water and 2 tbsps sugar and place the pan on stovetop.
Keep stirring the
sugar water mix until you see bubbles appearing. Gradually you will see the
sugar turning brown in color and caramelizing.
Turn off the gas
and spread the caramel equally on the base as well as the sides. You need to be
very fast as the caramel sets quickly.
Pour the bread
batter in the caramelized pan and tap gently to settle.
Heat water in a steamer
and place the covered pan in it.
Steam the pudding
for 30-35 mins in medium flame.
Once the pudding
is ready, allow it to cool down completely and then invert it to a plate.
You can cut it to desired shape before serving.
Notes
Be sure you do not over heat the sugar syrup after it turns
golden in colour, otherwise it may taste bitter. Also, take care not to burn it
in the sides of the pan, tilt it frequently to avoid this.
