EGG PAV BHAJI
Ingredients
4 eggs (beaten)
3 medium tomatoes (finely chopped)
1 medium onion (finely chopped)
2-3 green chillies or to taste (finely chopped)
2 small potatoes (roughly grated)
1 cup corn (boiled)
½ cup peas
½ bell pepper of any color (finely chopped)
½ cup coriander (finely chopped)
1 tablespoon pav bhaji masala
¼ teaspoon turmeric
2 teaspoon kashmiri red chilli powder
½ teaspoon roasted cumin powder
Salt to taste
2 tablespoon oil
2 tablespoon butter or to taste
Lime wedges, buttered pav/bread and chopped onion to serve
Instructions
In
a large pan, heat 2 tbsp of oil and add chopped onions. Saute the onions until
they are light golden brown in color. Then add grated raw potatoes, corn, peas
and chopped bell peppers. (you can also add other vegetables of choice). Saute
for 2-3 minutes, now add the chopped tomatoes, green chillies, turmeric and
salt to taste. Cook the potatoes for 5-7 minutes or until they are soft and
mushy. Now with the help of a masher mash everything really well. Also, add ⅓ cup water if the bhaji is too dry. Now cover
and cook on low flame for 5 - 10 minutes or till well cooked and everything
combined. Remove the lid and mash the bhaji one more time so that it is smooth
(you can add more water if bhaji is too dry), now make a well in the center and
add 2 tbsp of butter, once it melts add 2 tsp kashmiri red chilli powder and 1
tbsp pav bhaji masala. Stir with the melted butter and then mix the bhaji along
with it. This gives the bhaji a nice color and flavor. Now add egg and ½ cup
chopped coriander. Mix well and also check for salt, add some if needed. Till
the eggs are done. Lastly, check the eggs, garnish with some more coriander
leaves and squeeze of lime juice. Serve with some buttered pav, lime wedges and
onions. Enjoy hot!
