Cucumber Kheer

 Ingredients
  • 1 cup milk
  • 2 teaspoon powdered green cardamom
  • 2 tablespoon cashews
  • 1/2 cup desiccated coconut
  • 2 tbsp milk powder
  • 3 tablespoon ghee
  • 2 cup grated cucumber
  • 1/2 cup condensed milk

Method
Take the cucumber, Rinse it well and grate it along with the skin an keep it aside. Next, take a pan add ghee once hot add grated cucumber and saute until they turn tender on medium flame. Once done, add desiccated coconut and mix well and cook for a minute. Pour condensed milk, milk and stir along. Turn the flame to low and let simmer for about 5 minutes. Once cooked, add cardamom powder, turn off the flame and cover with a lid. Place a pan on medium flame, pour little ghee and once heated, add cashews and fry until golden brown. Pour it over the prepared cucumber kheer while serving.
