Instant Mango Kulfi
INGREDIENTS
Blend on a medium speed for 2-3 until smooth.
1-Cup fresh mango puree
½-cup fresh cream
10 to 12 almonds
8-9 saffron strands soaked Warm Milk
1/4 cup chilled milk
½ cup condensed Milk,
¾ tsp cardamom powder
2 tsp chopped Pistachio
Almonds & Pistachio for garnish
METHOD
For
Puree:
Wash and peel
mangoes. Chop them into cubes and blend to make a smooth puree.
For
Kulfi Mix:
In a mixing bowl,
add the almonds, whipping cream, mango puree, saffron strands mixture, chilled
milk, condensed milk, cardamom powder, and pistachios.Blend on a medium speed for 2-3 until smooth.
Freezing:
Transfer kulfi mix
to kulfi molds, or paper cups or a container as per your choice. Close the lid
& freeze for 8 hours or overnight. Once the kulfi is well set, if in moulds
dip the molds into water, prise the kulfi out with the help of a knife. Garnish
with almonds, pistachios. If in a container, cut them into slices & serve
it.
