Mango Dahi Vada
Ingredients:-
For Vada:
1-cup Urad dal
(split, skinless black gram)
Water for grinding
Salt to taste
A pinch of Baking
soda
Oil for frying the
vadas
Dahi mixture:
2 cups plain
yoghurt
1-cup fresh mango
puree
1 tsp Roasted
cumin powder
1 tsp chaat masala
powder
Salt to taste
Method: -
Wash urad dal under running cold water until water runs clear.
Soak it in enough water for at least 2 to 3 hours.
Drain the soaking water completely. Add that to the blender or
grinder and make smooth paste out of it. Remove it to a bowl.
Add salt and baking soda. Mix well. Now using a spatula or by
hand, beat the batter for good 5 minutes until batter gets light and fluffy.
Check the batter consistency. Now heat the oil in a pan on
medium heat for frying the vadas. Once hot drop the vadas using two spoons or
by hand.
Fry the vada on medium heat until they are crispy and golden
brown in color. Remove it to a paper towel lined plate. Then take water in a
large vessel or bowl. Add the warm vada into the water.
Let it soak for 10 minutes. After that, squeeze the excess water
very lightly by pressing it between your palm.
Making dahi mixture: Take yogurt in a
bowl. Add mango puree,
roasted cumin powder and salt.Whisk it until it
gets smooth. Keep refrigerated until needed.
Making dahi vada recipe:Arrange the
squeezed vadas into a bowl. Add yogurt, all the vada should be covered with
yogurt. Sprinkle some chaat masala powder. Serve the immediately. Or you can
refrigerate it.
