Hariyali Pav Bhaji
Ingredients
Oats
roasted ½ cup
Spinach
leaves boiled 1 cup
Green
capsicum chopped ½
Fresh
Coriander leaves ½ cup
Green
peas 1/4 cup
Tomatoes
pureed 2 medium
Cauliflower
grated 1/2 cup
Potato
boiled, peeled and mashed 1
Pav
as required
Oil
as required
Butter
3 tbsp
Ginger-garlic
paste 2 tbsp
Green
chilli 3 to 4
Onion
finely chopped 2 medium
Pav
bhaji masala 2 tbsp
Salt
to taste

Method
Heat oil and
butter in a pan. Add ginger-garlic paste and sauté for a minute.
Add green chilli
paste, mix and sauté for 2 more minutes. Add onion and sauté until it turns
golden brown. Grind spinach, green chillies and coriander leaves with a little
water into a fine paste. Add capsicum, green peas and cauliflower in the pan,
mix well, mash and cook for 4-5 minutes. Add pureed tomatoes, mix well and cook
for 3-4 minutes. Add ground paste, mix well and add pav bhaji masala, salt and
some butter. Mix well, cover and cook for 8-10 minutes, stirring once a while. Add
potato, oats, mix well and cook for 3-4 minutes. Add little water, mix again
and switch off heat. Serve it hot with butter pav and little chopped onion and
lemon on side. Enjoy.
