Lobia (black eyed peas) curry
Ingredients:-
Black Eyed Peas 1 cup (Soaked overnight)
Turmeric powder 1/4 teaspoon
Chilli powder 1 teaspoons
Garam masala powder 1 teaspoon
Cumin seeds 1 teaspoon
Oil 1 tablespoon
Onion roughly chopped 2
Green chillies 2
Garlic finely chopped 2 teaspoons
Tomato puree 4 tablespoon
Fresh chopped coriander leaves
Directions:
Heat sufficient water in a deep non-stick pan. Add black-eyed
peas and turmeric powder, mix well and boil. Heat oil in a non-stick pan. Add
onion and saute well. Slit green chillies into halves lengthwise, add to the
pan along with garlic, and saute for 2 minutes. Add tomato puree and mix well
let it cook for about two minutes. Add boiled black-eyed peas along with the
stock and stir to mix. Add garam masala powder and chilli powder and mix well.
Simmer for 3-4 minutes and allow to cook then garnish with fresh coriander and
Serve hot. Chill in refrigerator until completely cold, 1 to 2 hours.
