Kuttu Paratha & Potato Peanut Sabji
Kuttu Paratha
Ingredients
2 cups buckwheat flour (Kuttu
ka atta)
2 boiled, peeled and mashed
potatoes
2 to 3 green chillies finely
chopped
Handful of coriander leaves
finely chopped
Rock salt to taste
Ghee for shallow fry
Method
Combine buckwheat flour,
mashed potatoes, chillies, coriander and salt in a bowl. Mix well.
Knead smooth and flexible
dough by adding enough water to it. Set aside for about 30 Minutes.
Divide dough into equal sized
balls and roll out each balls into a paratha.
Roast each paratha on heated
tawa, by applying little ghee layer on each side till golden brown.
Remove the paratha from tawa
when both the sides are roasted well.
Kuttu ka paratha is ready to
eat, serve hot with curd raita.
Potato
Peanut Sabji
Ingredients
4 potato into small pieces
& boiled
1 Cup Roasted Peanuts crushed
Half tsp asafoetida
Few curry leaves
4-5 chili slit into half
1 tsp Cumin seeds
Half tsp lemon juice
Handful of coriander leaves
finely chopped
2 tsp Ghee
Rock Salt as per taste
Method
Heat the ghee in a deep pan
add asafoetida & cumin seeds once it crackles add curry leaves and green
chillies saute it for a minute.
Then add boiled potatoes and
mix well then add the peanuts and mix thoroughly.
Switch of the flam and add
lemon juice and coriander leaves.
Enjoy with the parathas.
