Semolina (Rava) Kachori




Ingredients:

1-cup semolina

Half-cup curd

Half tsp black pepper powder

2 potatoes boiled and mashed

Half cup green peas boiled & mashed (U can use frozen too)

1 tsp cumin

1 inch ginger finely chopped

3 to 4 green chillies finely chopped

1 medium size onion finely chopped

Half tsp turmeric powder

Half tsp chilli powder

Half tsp coriander powder

Half tsp chaat masala

Salt as per taste



For Tempering

1 tsp oil

Curry leaves few

2 dry red chillies

Mustard leaves

1 tsp dry coconut (optional)



Method

First, in a bowl take semolina, add curd salt and black pepper powder mix well to form a dough if required then only add little water and rest the dough for half an hour. Take a pan add oil once hot add cumin seeds green chillies, ginger and onion and saute will till the onion are slightly brown then add mashed potatoes, green peas , turmeric powder, chilli powder, coriander powder, chaat masala and salt as required and mix it well so all the masalas are combine well. Your mixture for filing is ready.



Now take the dough add a spoon of oil and mix it well and knead for 5 mins more. Take out a small lump (size of lemon) from the dough and shape it like a ball. Roll and flatten the dough into a disk of 1 or 2 inches diameter. Put one small spoon of filling on the flattened dough and close it with your fingers. Now press it into a round shape so that the filling spreads evenly inside it. Now again roll it into a puri shape. Like this, use all the dough and filling to make these kachori.



You can make this kachori in two ways either by boiling or by steaming it



For boiling keep a water in a wide pan and let it boil once boiled   add the kachori to the water and cover the lid and let it cook for about 10 mins. Then remove the lid you will see all the kachoris will be floating at top. Drain and remove it carefully from the boiling water and place it in a serving dish and add the tempering and serve.



For steaming, heat the steamer once the steam comes, place the kachori in a plate and place it on the steamer. Steam cook for 15 to 20 mins on low flame. Turn off the stove and rest inside the steamer for 5 mins more. Then remove it add the tempering and enjoy
