Paneer Bhurji
Ingredients
2 tbsp oil
1 onion finely
chopped
salt to taste
1 green chilli
finely chopped
1 tsp
ginger-garlic paste
½ tsp red chilli
powder
1 tomato finely
chopped
¼ tsp turmeric
½ tsp garam masala
powder
2 cup paneer / cottage cheese crumbled
Little coriander
leaves finely chopped
Method:
In a large kadai heat oil, add onions, green chilli and
ginger-garlic paste. Saute well until the onions turn golden brown now add
tomatoes and saute until they turn soft and mushy. Then add red chilli powder,
turmeric, garam masala powder and salt to taste.
Roast the spices on low flame for a minute. Add crumbled paneer
/ cottage cheese and mix gently. Mix gently without mashing out paneer. Cover
and simmer for 2 to 3 minutes until the paneer is cooked well. Do not overcook
paneer, as they turn hard.
Also, add coriander leaves & mix gently, making sure
everything is combined well.
Serve paneer bhurji hot with chapatti or paratha
