2 Packets        Maggi Noodles, cooked (without seasoning packet)
1 ½ cup          Gram Flour or Corn Flour
½ cup             Carrots, Finely sliced
½ cup             Green Cabbage, Finely sliced
½ cup             Onion, finely sliced
½ tsp              Ginger finely chopped
1 tsp               Green chilli, finely chopped
2 tbsp             Fresh Coriander, chopped
2 tsp               as per Salt
1 tsp               Red chilli powder
½ tsp              Coriander Powder
½ tsp              Cumin seeds
¼ tsp              Amchoor (dried mango powder)
Big Pinch        Baking Soda
1 tsp               Oil
½ cup             Water
Oil for frying

Method:

Cook both packets of noodles without the seasoning packet until just cooked.  Run cold water over them to stop the cooking process. Set aside. Heat oil in a wok or pan. In a large mixing bowl, combine all of the ingredients except for the noodles and water.  Coat everything well with the gram flour or corn flour and seasoning. Add the little water very slowly, to create a thick, smooth paste with the vegetable mix. Add the noodles to the vegetable mix.  Mix the noodles and vegetables together gently in the batter using your hands. Test a small bit of the batter in the oil to see if the temperature is right. To make the pakoras, mix loosely.  Place into the frying oil Cook until a dark golden brown.  If you find that it gets brown too quickly, turn the heat down a bit. Drain on paper towels.  Serve hot and enjoy with your favourite chutney or ketchup!
