Egg Appe



Ingredients

   Eggs - 5
   Onion - two medium size
   Tomato - two small-deseeded
   Green Chillies - four finely chopped
   Cabbage – 2 tbsp chopped

   Carrot – one finely chopped or grated
   Coriander leaves - 1 tbsp finely chopped
   Turmeric powder - 1/8 tsp
   Salt as needed
   Pepper powder as needed
   Oil - 5-6 tsp
   



Preparations


Finely chop onions, green chillies, carrot, cabbage and tomato (remove the seeds).In a bowl, break 5 eggs, add salt, turmeric powder, pepper powder and beat with a fork until foamy. Add finely chopped onion, tomatoes, carrot, cabbage, green chilli and coriander leaves. Mix well. Egg appe batter is ready.  Heat appe pan; add 1/2 tsp of oil in each hole/cavity. Fill each cavity with the egg batter. Cook covered on low heat for few minutes.

Remove from pan and serve immediately with any chutney or ketchup.
