Moong Daal Koshimbir
Ingredients:-
Split green gram skinless (washed moong dal),soaked

3/4 cup

Cucumbers
|
2 medium
|
|
Green chillies, finely chopped
|
1 teaspoon
|
|
Scraped coconut
|
3 tablespoons
|
|
Salt
|
to taste
|
|
Lemon juice
|
1/2 tablespoon
|
|
Ghee
|
1 1/2 tablespoons
|
|
mustard seeds
|
1/2 teaspoon
|
|
Asafoetida
|
1/4 teaspoon
|
|
Fresh coriander leaves, chopped
|
1 tablespoon
|
Directions:
Peel and grate the
cucumbers and put in a bowl. Drain and add moong dal along with green chillies,
coconut, salt and lemon juice and mix.Heat ghee in a small non-stick pan, add mustard seeds and asafoetida. Add the tempering to the cucumber mixture and mix well. Serve garnished with coriander leaves.
